There’s a taste of the Carbbean coming to Norwich Lanes as Turtle Bay opens its doors in a matter of days and I’ve been lucky enough to bag an invite to the VIP launch this Thursday!


Whilst I’ll be blogging and vlogging the event here’s a little post to wet your Caribbean appetite with Turtle Bays mouthwatering Jerk Salmon & Pineapple Salsa recipe


What you’ll need – (Serves 2)

For the Salmon:

2 x 6oz Salmon Fillet’s | 30 gms Plain flour | 25 gms Jerk Seasoning

25 gms Melted Butter | Pinch of Sea Salt | 2 x Lime Wedges

Pineapple Salsa:

2 x Fresh Pineapple slices | 1 x Spring Onion | 150 gms Cucumber

¼ Scotch Bonnet Pepper -finely diced (optional) | 3 x Mint Leaves | 3 x Coriander Leaves


Pre-Heat your oven to 220 degrees

First up – Place a non-stick frying pan on the hob & wait until pan is hot and slightly smoking before adding a little oil

Place your salmon fillets skin side down in flour and pat excess flour off with your hand


Place the salmon skin down into your hot frying pan & leave it to cook for 30 secs


Brush your jerk seasoning on to the salmon flesh (I used a dry rub)

Place into your oven & cook for 8-12 mins


Meanwhile, for the pineapple salsa, cut the pineapple slices and cucumber into small chunks

(Mine is minus cucumber because the teenager ate it all!)


Finely slice the spring onion and place into a mixing bowl


Add the finely chopped scotch bonnet (optional) mint & coriander leaves and mix together


Remove salmon from the oven & leave to rest before brushing the skin side of the salmon evenly with the butter and sprinkling over the sea salt


Remove from pan using a spatula or fish slice and place onto a plate

Serve pineapple salsa over the salmon and your choice of side salad, garnish & Lime


With an investment of over £800k, the restaurant will be over 2 floors and seat 180 people also providing 50 brand new jobs to the area

Turtle Bay can be found on Swan Lane, the old fabric warehouse or Cult clothing if you’re as old as me! It’s a beautiful grade II listed building

After a sneak peek through the windows, I can’t wait to go Thursday to try the food and cocktails, the decor looks amazing and I even saw half a camper van inside!
